Each bit of corn contains a little bit of water which when heated up turns into steam and expands. The pressure of this steam eventually breaks through the corns outer casing and the corn explodes or pops!
When it pops the movement of the explosion will create a sound wave which travels to our ears allowing us to hear the characteristic pop.
