Honestly, sometimes the most boring things are the most important. Farming meant that people settled down and built cities, which created the first civilisations. The printing press meant that everyone could have access to books, and hence could learn what someone on the other side of the world who died hundreds of years ago had to say. Modern medicine means that people live longer and are healthier than ever before. So sure, rockets and lasers are awesome, but sometimes the boring inventions are more useful.
Writing. Without writing we would probably have no science, no arts in any form we can recognize, no real sense of history or language. In short, without writing we wouldn’t be living life as we know it.
A traditional answer is “the wheel”. This simple thing started all our engineering, which has turbo-charged our species into changing the world around us.

On a more serious note, I know you probably all hate it, but math was pretty important too. Without a number system and logic base science is just philosophy, and we would have no financial system or economics.
Though cake is a good answer too. Now I want cake….
